Dulce de Leche (cooked condensed milk) cupcakes
To prepare Dulce De Leche (cooked condensed milk)
1 tin condensed milk – remove the paper around it. Don’t open the can. Use a pressure cooker for this. Immerse the tin in water. Water level should be above the tin. Close the lid. Cook in medium flame for one whistle and reduce and cook for 40 minutes. After cool down open it.
Mix together 1 cup flour, 2 tsp baking powder, 1/4 tsp salt and seive this.
Beat together 85 gm butter and 3/4 cup sugar. Beat till creamy. Add 2 eggs one after another. Add 1/2 tsp vanilla essence and beat. Add 1/2 tin of prepared dulce de leche (cooked condensed milk)and beat. Add 1/2cup +2 1/2 tbsp milk and add flour mix. ( start with flour and end with flour)beat well.
Line the cupcake mould into cupcake liner or butter the pan for loaf cake. Place the butter paper then brush the butter again on the paper. Pour the batter and bake at 180 degree C for 30-40 minutes.
